Our resident cocktail maestros at Cod & Lobster Brasserie, Nick Widley and Pete Coates, have been selected to represent New Zealand in the 42Below Cocktail Earth Cup in Queenstown at the end of August.
Nick and Pete were hand picked to compete in the prestigious sustainability-focused cocktail competition along with three other teams from New Zealand!
“We decided to enter the competition because sustainability is an important part of our ethos, and mixing great cocktails is a big part of what we do.
The cocktail was created as part of our entry was the ‘Manuka Brewski’, which was inspired by our love of coconuts and the humble coconut tree. Everything about the coconut tree is useful. It makes great building materials, shelter, food, water, sugar and even strainers for drinks; if a coconut washes up on a beach, it can seed itself and be producing fruit within a year.
Our cocktail creation only calls on the use of one other liquor – a foaming agent made from another type of tree – lemons, cacao, ginger root and a touch of active yeast. The idea is that the simple, natural approach to this drink will help people to become more aware that a carbon footprint does not need to be big in order to create something delicious.”
